Da Shi Jia on Killiney Road is the name most associated with big prawn white bee hoon in Singapore, the dish that built its reputation and the reason for the queues. White bee hoon (白米粉) is the stock-braised style of rice vermicelli, cooked in a seafood stock so the noodles drink up all the flavour, finishing somewhere between fried and soupy.

Ordered the Da Shi Jia wok-fried big prawn white bee hoon ($16.80++), the signature: fat fresh prawns on top of bee hoon braised in a rich prawn-and-seafood stock, the noodles slippery and soaked through with the broth. The prawns are the headline, big, sweet and fresh, and the stock-soaked vermicelli underneath is where all the flavour lives.

Added on the green apple juice with sour plum drink ($3.80++), refreshing, the sour-plum tang cutting the richness of the stock-braised noodles.

We felt it was a tad bit pricey for a bee hoon dish, but the prawns were genuinely big and fresh and the stock had real depth, so it is worth a try and a visit at least once.
