This was the drier, paler style of Hokkien mee, the mix of yellow noodles and bee hoon wok-fried and braised in a savoury prawn stock until the strands soaked it all up, glistening rather than soupy. A bit of egg through it and that faint smoky wok hei you want from a good plate.
The pleasure of Hokkien mee is in the doctoring. The sambal on the side is essential: a spoonful stirred in, plus a good squeeze of the calamansi lime, and the whole plate lifts with chilli heat and a hit of citrus that cuts the richness. We each go heavy on the lime.
It is unfussy, comforting eating, the sort of plate you happily order two of and tuck into without much ceremony. At $4 each it is honest hawker value, and a satisfying, no-fuss way to end the weekend.
Overall: 4.5 / 5. πππΌ Prawn-stock noodles brightened with sambal and a good squeeze of calamansi. Would re-order.
