Japanese food for dinner: chirashi don & chawanmushi!
A Japanese dinner: a chirashi don with salmon, tuna and white-fish sashimi over rice, with a silky chawanmushi on the side.
A lovely Japanese dinner with BB that Iโm only getting round to posting now: a chirashi don with a chawanmushi on the side. ๐ฃ๐
What we had:
- Chirashi don: thick slices of salmon, tuna and white fish over sushi rice, with shiso, wasabi and pickled ginger
- Chawanmushi: a steamed savoury egg custard with a prawn inside
The chirashi don was the star, and a beauty: generous, glossy fans of salmon, tuna and white fish laid over a bed of vinegared rice, served in a handsome lacquered bowl. The fish was fresh and clean-tasting, each kind with its own texture, the salmon buttery, the tuna firm and lean, the white fish delicate. You add a little wasabi, work it down into the rice, and it is a simple, pure pleasure of a bowl.
The chawanmushi was the comforting companion: a wobbly, silky-smooth steamed egg custard, gently savoury with dashi, with a sweet prawn hiding at the bottom. Cool sashimi and warm custard make a really nice pairing.
Nothing showy, just fresh, well-made Japanese food, the kind of dinner that quietly stays in your memory and is worth posting even days later.
