What I had:

This is a clever mash-up: take the Teochew braised duck tradition and serve it over Japanese-style ramen noodles instead of the usual kway teow or rice. It really works.

The braised duck is the heart of it, slices of duck that have been slow-cooked in a dark soy master stock with five-spice, ginger and rock sugar, so the meat is tender and deeply infused with that sweet-savoury, aromatic braise. The broth carries that same master-stock flavour, dark and fragrant, and the springy ramen noodles soak it up nicely, giving a chewier, bouncier bite than traditional noodles would.

The soft braised egg is the bonus, soaked in the master stock until it takes on the colour and flavour right through, and the beansprouts and coriander keep it fresh. A dab of chilli on the side adds a kick.

It is comforting and a little different, the familiar flavours of braised duck in a new form. At $6, a tasty, satisfying bowl.
