A night of Jim Beam Highballs: bourbon and soda in a lychee and a mint version, poured tall and fizzy over ice.

What we had:
- A lychee highball and a mint highball, both Jim Beam bourbon topped with soda over ice
The highball is such an easy-drinking format, and these were exactly the cheerful, fizzy kind you can happily keep ordering. The base is Jim Beam bourbon stretched long with plenty of soda water and ice, so it stays light and refreshing rather than heavy, the whiskey there for warmth and flavour but not overpowering.
The mint one was crisp and herbal, almost mojito-like with that cooling lift from the mint, while the lychee one was the sweeter, more fragrant pour, with a lychee bobbing on top and that perfumed, fruity note coming through. Both went down dangerously easily.
That is the whole charm of a highball night: light, bubbly, low-fuss drinks you can sip and chat over for hours without it getting too serious. Tall, cold and fizzy, with the bottle chilling in an ice tower beside us, it made for a relaxed, lively evening.
