A comforting, wallet-friendly hawker lunch: braised duck noodles, $3. ๐
What I had:
- Duck noodles: shredded braised duck over flat rice noodles in a dark braising sauce, with fried shallots and spring onion, plus a bowl of soup and chilli on the side
This is everyday Teochew braised duck done cheaply and well. The duck is slow-cooked in a dark soy master stock with five-spice, ginger and rock sugar until tender and infused right through with that sweet-savoury, aromatic braise, then shredded over the noodles. The glossy braising sauce spooned on top ties it all together.
The wide flat rice noodles are the perfect base, soft and slippery, soaking up all that dark, fragrant sauce, with a generous scatter of crispy fried shallots adding crunch and fragrance. A bowl of clear soup comes on the side for sipping, and a dab of the chilli gives it a kick.
It is humble, hearty and full of that deep braised flavour that only comes from a long-simmered master stock. And at $3, it is the kind of honest budget eating that is getting rarer in Singapore, the sort of cheap, satisfying plate that keeps you coming back.
