The Western casual restaurant dinner format puts substantial mains (fish & chips + pork ribs) on the table for sharing, with the proper cocktails as the drinks pairing. Different from the Asian-restaurant family-style sharing (multiple smaller dishes), the Western format leans the two-mains-shared approach.

The fish & chips was the British-pub-style classic. Battered fish fillet, chunky chips, tartar sauce, lemon wedge — the format we’d done multiple times across the year. The proper Western casual restaurants run the format with the proper beer-battered fish and the proper chunky chip preparation.

The pork ribs were the substantial protein. Slow-cooked baby back ribs or St. Louis-style ribs with the proper barbecue glaze. The Western pork rib format usually involves multi-hour cooking (smoking or oven-braising) to render the connective tissue and produce the fall-off-the-bone texture.

The raspberry collins was the fruit-based cocktail. The Tom Collins format (gin + lemon juice + sugar + soda water) with raspberry incorporation — either fresh raspberries muddled into the drink or raspberry syrup adding the sweet-tart pink colour and flavour.

The apple mojito was the second cocktail. The Cuban mojito format (rum + mint + lime + sugar + soda water) with apple incorporation — apple juice or fresh apple muddled into the standard mojito recipe. The apple adds the fresh sweet character without overwhelming the standard mojito’s mint-lime-rum balance.

The combination of two mains + two cocktails is the proper Saturday casual dinner format. Substantial enough to feel like a proper meal, with the cocktails providing the small drinks ceremony.

At Western casual restaurant pricing for the spread, this is probably $80-100 for two before the discount or promotional pricing. The pricing tier sits in the mid-tier casual sit-down format.

Saturday Western dinners are part of the weekend rotation. Different from the Asian dinner formats, the Western variant provides the proper variety in the dining schedule.
