Fish & chips, Pork ribs, Raspberry collins, Apple mojito!

A relaxed Western dinner with BB, two hearty mains and a couple of cocktails to share. ๐น๐
What we had:
- Fish & chips: beer-battered fish with fries, slaw and tartar
- BBQ pork ribs: sticky glazed ribs with potato wedges and vegetables
- A raspberry collins and an apple mojito
The fish & chips was the dependable order, fillets in a light, crisp golden batter, flaky inside, with fries and a bright lemon wedge. Comforting and familiar.
But the pork ribs were the star. Slow-cooked until tender and lacquered in a sticky, smoky barbecue glaze, with that lovely caramelised, sweet-savoury crust, the kind of ribs you happily get your fingers messy for, served with crispy wedges and a few greens.
The cocktails kept it fun. The raspberry collins was the refreshing one, a gin-based Tom Collins with raspberries muddled in for a sweet-tart, ruby-pink lift, while the apple mojito was the crisp, minty one, the classic rum-mint-lime mojito brightened with fresh apple. Both went down easily against the rich food.
Two mains, two cocktails, sitting in a cosy spot, it was the kind of unhurried, easygoing dinner that hits the spot. Nothing fancy, just good comfort food and nice drinks to wash it down.
