Konjiki Hototogisu (้่ฒไธๅฆๅธฐ) is a Michelin-starred ramen shop from Tokyo, and the Singapore outlet at CHIJMES brought its signature bowl here. What sets it apart is the hamaguri (clam) broth: a clear, elegant soup built on clams alongside the usual chicken and seafood, giving it a clean, briny-sweet depth that is a world away from heavy tonkotsu, and notably MSG-free.

Overall, we preferred the Shio Hamaguri over the shoyu, the salt base let the clam brothโs clean, briny sweetness shine, and it being MSG-free was a nice bonus. Definitely worth recommending and revisiting! ๐๐ผ
