What I love about mee hoon kuey is the noodles. They are torn by hand into irregular flat pieces and dropped straight into the broth, so each one is a slightly different size and shape, soft with that lovely uneven, springy bite you only get from hand-torn dough.
The soup here was the cloudy, savoury kind that tastes of everything that has gone into it, with a generous heap of crispy fried ikan bilis (anchovies) on top lending it that deep, salty-sweet anchovy savouriness. Tumbled through were soft minced pork, fried shallots and a handful of leafy greens.
Stir in a spoon of the chilli on the side and the whole bowl lifts. It is the sort of homely, soul-warming food that does not try to impress and somehow hits the spot every time. Hand-torn noodles for $3 these days is a small win in itself.
