Beef hor fun is the Cantonese-Singapore wok dish that puts flat rice noodles (hor fun, 河粉) in a dark sweet-soy gravy with sliced beef and vegetables. Different from the Penang char kway teow which uses the same flat noodles but with a different sauce profile, the beef hor fun leans the Cantonese sweet-soy-gravy direction.
The hor fun noodles were the foundation. Flat broad rice noodles, lightly stir-fried first to develop wok-hei, then ladled over with the dark sweet-soy gravy at the end. The proper technique keeps the noodles slightly slippery without going soggy, with the gravy coating each strand.
The beef slices were the protein. Thin slices of beef stir-fried in the wok at high heat — just enough cook to develop the slight char on the edges, but quick enough that the meat stays tender. Marinated beforehand in light soy, cornflour, sesame oil for the proper Cantonese velvet-meat technique.
The gravy was the dish’s defining element. Dark sweet-soy sauce thickened with cornflour into a glossy mahogany pour, with the slight wok char from the high-heat cooking. The proper Cantonese gravy has the umami depth from the soy and the slight sweetness from the rock sugar.
Vegetables included blanched leafy greens (probably kai lan or choy sum) for the green-fresh component, and sliced ginger for the warm aromatic note. Some stalls add sliced mushroom or capsicum.
A small dish of chopped chillies in light soy on the side for the optional spice kick.
At $5 a plate this is fair hawker pricing for the beef hor fun format. The Cantonese-influence stalls usually price this dish at $5-6, slightly above the standard $4 noodle dishes because of the beef ingredient cost.
The Thursday hawker lunch is part of the rotation. Beef hor fun isn’t an everyday choice but rotates through every couple of weeks.
