What was in the bowl ($5):

Hor fun (河粉) are the wide, flat rice noodles you also find in beef chow fun and sang har mee, prized for the way their smooth, slippery surface carries a sauce. This is the Cantonese-style beef hor fun done as a soupy bowl rather than dry-fried: the noodles sit in a dark, savoury broth seasoned with plenty of black pepper, so each spoonful has that warming peppery bite. The beef is sliced thin and cooked just enough to stay tender, the onions melt into the soup for sweetness, and the greens keep it from feeling heavy. The mushroom slices add an earthy note that rounds out the gravy.

What I like about the soup version over the dry-fried plate is how the broth keeps everything moist and lets the pepper come through in every mouthful, less wok-hei char, more comforting warmth. It’s the sort of bowl you’d want on a rainy afternoon.
