What I had:
- Hokkien prawn mee with squid, prawn and pork, topped with crispy lard, with sambal and a calamansi on the side
This is Singapore Hokkien mee done properly: a mix of springy yellow noodles and thin bee hoon, wok-fried with egg and then braised in a rich prawn stock so the noodles drink it all up and turn savoury, glossy and a touch wet, with that smoky wok hei through them.
It came generously topped: tender squid (sotong) with a gentle bite, sweet prawn, slices of pork, and a scatter of crispy pork lard that adds crunch and that unmistakable Hokkien fragrance. The prawn stock is the soul of the dish, and you can taste the depth of it in every strand.
The finish is the important bit: a smear of the sambal stirred in and a good squeeze of the calamansi over the top, which brighten and spice it up so the richness never feels heavy. Comforting, full-flavoured and satisfying, and at $4 for this much seafood, great value.
Overall: 4.5 / 5. 😋👍🏼 Prawn-stock-soaked Hokkien mee with sweet squid, crispy lard and a bright squeeze of lime. Would re-order.
