What we had:

This was a generously stacked plate. Underneath all the toppings was a base of soft fried bee hoon (rice vermicelli), lightly seasoned with soy, and on top a real spread of the good stuff that makes vegetarian stalls so satisfying.

There was springy mock char siu with its red-edged slices, plenty of soft braised shiitake mushroom for that deep, savoury, almost meaty flavour, crisp-then-chewy fried beancurd skin soaking up the sauce, a thick slab of golden tau kwa (firm beancurd), and soft stir-fried cabbage. A spoon of chilli over it ties everything together.

What I like about a good vegetarian bee hoon is how the mushrooms and mock meats give it all the savouriness you would want without any actual meat. For $3.60 this was a hearty, flavour-packed plate, the kind that does not leave you missing anything.
