Happy mid-week! 😋 A satisfying hump-day hawker plate to get over the Wednesday hump: fried Hokkien mee, $4.
What I had:
- Fried Hokkien prawn mee: yellow noodles and bee hoon with prawn, squid and pork lard, with sambal on the side
Hokkien mee lives or dies on the stock, and this plate had it. A mix of springy yellow noodles and thin bee hoon is wok-fried then braised in a savoury prawn-and-pork stock until the noodles drink it all up, so every strand tastes deeply of the sea. Little nuggets of crispy pork lard scattered through add that irresistible crunch and richness.
There were sweet prawns and bits of squid worked into it for the seafood, and the two things that finish it off are the sambal and a squeeze of lime: a smear of that spicy, shrimpy chilli and a hit of citrus brighten and lift the whole plate so it never feels heavy.
It is humble, a little messy, and exactly the comforting, full-flavoured plate that turns a mid-week lunch into a small treat. Great value at $4.
