The artisan thick-cookie format is the trend that took over the Singapore bakery scene in 2020. Influenced by the New York-style Levain Bakery cookies — palm-sized, half-pound cookies with gooey centres and crispy edges, baked just past underdone so the centre stays soft. The format produces a cookie that’s part-cookie, part-dessert, and entirely indulgent.
Triple chocolate was the dark scoop. Dark chocolate cookie base (cocoa powder in the dough), studded with three different chocolate chunks (dark, milk, white). Deep chocolate flavour, slight bitter edge from the cocoa, gooey centre with melted chocolate pools throughout. The kind of cookie that’s better warmed slightly so the chocolate stays semi-melted.
Oatmeal raisin was the substantial cookie. Whole rolled oats provide the texture, raisins (rehydrated in rum or apple juice for extra plumpness, in the artisan versions) provide the sweet-fruity counterpoint, cinnamon and brown sugar provide the warmth. Less indulgent than the triple chocolate but more interesting on the flavour layers.
Chocolate chip was the classic. The Levain-style chocolate chip cookie has been the format-defining version — Toll House classic recipe, scaled up with extra butter, brown sugar, and chunked dark chocolate instead of mini chips. The thick palm-sized format makes each cookie feel substantial.
Texture across all three was the test. Properly underdone in the centre so the cookies stay soft and gooey when warmed (microwave 10 seconds, or oven 3-4 minutes at low temp). Crispy edges from the brown butter or higher oven temp at the start. The contrast of crispy-edge-soft-centre is the entire point of the format.
At $35 for the assortment box of probably 6-9 cookies depending on count, this is fair artisan bakery pricing. Individual cookies run $4-6 at this tier; the box pricing usually saves a small percentage.
The cookies got distributed across the week — a couple eaten warm immediately, the rest stored for later. The thick cookie format keeps well for 3-4 days at room temperature.
Phase 2 had restored access to the artisan bakery scene, and the cookie box order had become one of the small weekly treats.
