Monday breakfast — mee hoon kueh at the hawker for $3.50. The Hakka hand-torn flour piece soup is one of the underrated Singapore breakfasts.

We ordered:

Mee hoon kueh (面粉粿) is the Hakka noodle dish where flat pieces of flour-and-water dough are hand-torn (or knife-cut) directly into a simmering pot of broth. The pieces are slightly irregular shapes — the hand-torn variation gives them a rustic look that machine-cut noodles can never replicate.

The broth was the clear ikan bilis-and-pork-bone base, white-pepper finish. Properly simmered down with anchovies and pork bones for the umami depth, then seasoned with white pepper and a splash of light soy. Clear amber colour, not too salty, with the slight sweetness that hours of bone-simmering develops.

Inside the bowl: hand-torn flour pieces (firm chew, slight bite from the well-developed gluten), minced pork (small bits scattered through), a couple of slices of pork liver (done just to the point of barely-pink, the proper rare-medium that liver should be), blanched leafy greens (kang kong or choy sum today), and a generous scattering of crispy ikan bilis, fried shallots and chopped spring onion.

The crispy ikan bilis on top is the underrated MVP. Salt, crunch, and concentrated fishy umami in one tiny addition.

A small dish of cut chillies in light soy on the side for the optional spice and sour-vinegar bite.

The mee hoon kueh format is one of those Hakka-Singapore dishes that’s quietly disappearing from the hawker scene as fewer aunties and uncles take over the stalls. Hand-tearing dough is labour-intensive, and the dish doesn’t trend the way other hawker classics do.

At $3.50 this is the kind of hawker pricing that’s getting harder to find for a hand-made dish.

Monday breakfast at the hawker is the proper Singapore start to the work week.

Overall: 4.5 / 5. 😋👍🏼 Excellent mee hoon kueh — would absolutely revisit.
