Roast chicken rice (烧鸡饭) is the Cantonese variant on the iconic Singapore chicken rice format. Instead of the poached Hainanese chicken (white-skinned, tender, with the gelatinous skin layer), the roast version uses chicken that’s been marinated in dark soy and roasted until the skin goes lacquered-mahogany and crispy.
The chicken was the headline. Sliced thin off the bone, with the slices fanned out over the rice. The roast skin had the proper deep amber colour with a slight crisp finish — the giveaway of a fresh roast rather than chicken that’s been kept warm too long. Meat underneath was tender, with the marinade flavour having soaked through during the roast.
Rice was the standard fragrant chicken rice base — short-grain rice cooked with chicken stock, ginger, garlic and a touch of pandan leaf. The rice that’s cooked with the chicken stock from the day’s poached chicken pickup, finished with rendered chicken fat for the signature glossy texture.
Chilli sauce came on the side as a small dish. The standard Singapore garlic-chilli-ginger-lime balance, with the proper lift that complements the chicken without overpowering.
A small bowl of clear chicken soup came on the side — the broth from the chicken stock pickup, lightly seasoned, with a few sprigs of cilantro and a touch of white pepper.
A small portion of dark sweet soy sauce for drizzling over the rice and chicken.
At $3.50 this is honest hawker pricing. The roast chicken rice variant is slightly less common than the Hainanese poached version because the roast requires more prep and less yield per chicken. Stalls that do both formats are the ones to chase.
The Thursday hawker lunch is the small mid-week break from the home cooking rotation. By Thursday the home weekday cooking energy is starting to flag, and the hawker stop delivers a hot proper lunch at $3.50 with zero cooking effort on our part.
Phase 2 had restored the hawker centres to full operation, and the chicken rice stalls were back to their regular queue lengths.
