The combination of roast duck on hor fun (flat rice noodles) and roast chicken on rice covers two of the standard Cantonese roast meats formats in one order. Splitting between the two plates lets us try both formats without committing to a single dish.
Roast duck hor fun came as the flat broad rice noodle base with sliced roast duck on top, finished with a dark sweet-soy gravy. The duck had the proper roast technique — crispy skin with the lacquered mahogany colour, tender meat underneath, with the slight chew that a properly cooked duck breast has. The hor fun underneath was lightly stir-fried in a touch of dark soy, with the slippery wide noodles providing the soft textural base against the substantial duck.
Roast chicken rice was the chicken variant on the chicken rice format. Sliced chicken thin off the bone, with the slices fanned out over fragrant chicken rice. Different from the Hainanese poached version because the chicken is roasted (lacquered skin, marinated meat) rather than poached (translucent skin, clean-meat).
Rice was the standard fragrant chicken rice base — short-grain rice cooked with chicken stock, ginger, garlic and a touch of pandan leaf. The rice that’s cooked with the chicken stock from the day’s pickup, finished with rendered chicken fat for the signature glossy texture.
Both plates came with chilli sauce on the side — the standard Singapore garlic-chilli-ginger-lime balance. A small bowl of clear soup with the chicken rice plate. A small dish of dark sweet soy sauce for drizzling over both plates.
At $11 for both plates this is honest hawker pricing — about $5-6 per plate. The roast duck hor fun is usually slightly more expensive than the standard chicken rice because of the duck cost, but both at sub-$6 is the proper hawker zone.
The Cantonese roast meats hawker stalls have been one of the consistent rotations through phase 2. The chains tried to enter this category but couldn’t match the hawker-stall execution at the hawker-stall pricing.
