Haddock is the proper British fish and chips fish. Most Singapore restaurants use dory or barramundi as the cheaper substitute, but the proper UK pub standard uses haddock or cod for the white-fish-in-batter format. Haddock has a firmer flesh than dory, with a slightly sweeter mild flavour and a cleaner finish.
This restaurant was running a 1-for-1 promo on the haddock plate, which meant two full haddock & crisps plates for the price of one. The pricing math at $19.77 for two plates is exceptional — full price each plate would’ve been close to $20-22.
The haddock fillet was the headline. A substantial piece (probably 200g+), battered in a proper beer-batter (the British technique using cold beer for the carbonation that creates the airy crispy batter), deep-fried until the crust shattered on first bite. The fish inside was flaky and steamed slightly when broken open with the fork — sign of fresh frying rather than reheating.
Chips (the British “crisps” naming on the menu confused some patrons but it referred to the thick-cut chunky chips, not American-style potato crisps). The chunky chips had the proper triangular cut, crispy shell, fluffy potato inside, salt-dusted.
A small ramekin of tartar sauce came on the side. The proper version with chopped capers, pickle, and parsley through a mayonnaise base.
Mushy peas were the genuine version (mashed marrowfat peas with mint), not just blended frozen peas, which is the differentiator. The bright green colour and the proper mushy-pea texture say this restaurant was committed to the British pub-classic format rather than a Singapore-restaurant approximation.
A wedge of lemon on the side for the squeeze.
At $19.77 for two via the 1-for-1 this is genuinely excellent value. The haddock fish-and-chips at most Singapore restaurants charges $25-30 per plate.
Phase 2 had restored access to the British pub-style restaurant tier, and the 1-for-1 promo made this format accessible.
