These lockdown-era home lunches became a bit of a Sunday thing, and BB has got the bolognese down. Two big bowls of spaghetti, boiled just past firm, piled with a generous, chunky meat sauce. The sauce was the homely, slightly Singaporean kind: minced meat simmered down with tomato into a thick, savoury-sweet gravy, with sliced mushrooms and rounds of cocktail sausage through it (the little touch that makes it taste like home).
It is not trying to be a fancy Italian ragu, and that is exactly its charm: comforting, saucy and generous, the sort of plate you happily go back for seconds of. The sauce had a nice tang from the tomato balanced by that gentle sweetness, clinging to the spaghetti so every forkful was well coated.
There is something really nice about a partner cooking you lunch on a lazy Sunday. Simple, hearty and made with care.
