What was on the plate:
- White rice: standard mound, soaks up the curry gravy
- Sweet and sour pork: orange-red sauce, with bell pepper chunks and pineapple, the classic Cantonese-zi-char crossover that lives on the cai png menu
- Stir-fried kang kong (water spinach): garlic-and-belacan profile, the leafy green standard
- Vegetable omelette (chye poh chien with long beans): scrambled eggs folded with chopped long beans
- Curry-coated fish cakes: round white fish cakes simmered in a yellow Singapore curry sauce, the dish makes the dish
- Curry gravy ladled over the rice (the colour wash you can see)
Cai png (ζθι₯, literally βmixed vegetable riceβ) is the Singapore economy rice format. You walk up to the stall, point at the items in the metal trays, the auntie/uncle spoons them onto a plate next to your rice. Pricing is by piece count, not portion size, which is why the bill is always a mystery until you reach the cashier.
The cai png canonical pick lineup:
- One meat (heavier protein): sweet and sour pork, curry chicken, chicken cutlet, char siew
- One vegetable / leafy green: kang kong, kai lan, choy sum, beans
- One egg dish (lighter protein): omelette, scrambled eggs, fried eggs, steamed eggs
- One soft / saucy item: tofu, fish cake, braised dishes, anything in gravy
- Optional: ladle of curry / kong bak gravy over the rice
The cai png economics are the invisible algorithm of Singapore lunch budgeting. Two dishes + rice usually runs $3.50-$4.50. Three dishes + rice usually $4.50-$6. The line between βregularβ and βpremiumβ picks (sweet-sour pork vs vegetables) silently moves your bill up by 80 cents to $1.50 per pick.
At $5.20 in the Bugis area, this is mid-range cai png for what looks like 4 picks plus curry gravy. Reasonable for the variety on the plate.
