Thursday lunch at a Bukit Batok vegetarian stall — went looking for something warming and ended up with one of the most underrated comfort orders, a bowl of ginger egg mee sua.

We ordered:

Mee sua are those impossibly thin wheat noodles, almost vermicelli-like in their delicacy, that cook in seconds and absorb whatever broth they’re served in. This bowl came in a clear, fragrant ginger-and-sesame-oil base that had been simmered long enough for the ginger heat to mellow into a warming, slightly sweet edge.

The toasted ginger was the star — slices of ginger fried in sesame oil until aromatic and slightly crispy, then tossed back into the broth. The aroma off the bowl alone was the kind that clears a foggy afternoon.

Soft-boiled egg on top with a barely-set yolk, ready to break and stir into the noodles for a custardy thicken. A small handful of fried mushrooms and wood ear added texture and umami without leaning meaty.

Mee sua dishes are traditionally served on birthdays and recovery days because the long thin strands represent longevity. This is also the dish to order when you feel a cold coming on. Vegetarian version held up against any pork-based one I’ve had.

At $6 a bowl this is honest hawker pricing for a less common dish.

Overall: 4.3 / 5. 😋👍🏼 Quietly restorative bowl — would absolutely revisit.
