Monday dinner at Tamoya Udon — one of the more authentic Sanuki-style udon spots in Singapore, where the noodles are made fresh on-site daily. The Burpple Beyond deal makes it a strong weeknight value play, so we always time visits around the promo.

Tamoya’s claim to fame is the Sanuki-style chew — thick, square-cut, distinctly springy udon that has bite without being gummy. The noodles are the whole point of the brand. They run a make-your-own counter format where you watch them ladle dashi over the bowl before you grab tempura from the trays.
The beef topping was thin slices in a sweet-soy glaze (gyudon-style), tender, with the beef juices running into the dashi as you mix. A whole soft egg yolk sat on top — break it, stir, and the whole bowl thickens into a custardy noodle situation that’s the platonic ideal of comfort food.
Dashi broth was clear, salty-sweet, with bonito-and-kombu depth. Tempura side was crisp prawn.
At $13 with a drink via Burpple Beyond, this is great Japanese value — full price runs closer to $17-18.
