What was on the plate ($6):
- Hokkien mee + bee hoon mix in wet prawn stock.
- Prawns + squid + sliced pork.
- Crispy fried pork lard cubes (chu-yu char) piled in centre — the standout topping.
- Sambal chilli on the left.
The crispy pork lard cubes = the SG-Hokkien hawker upgrade. Adds nutty-crunchy bursts + rendered pork fat richness. Without lard, Hokkien mee is missing half the soul.
Overall: 4.3 / 5. Pork lard was the differentiator, prawn stock had depth, sambal added the lift. AMK hawker reliable. 😋👍🏼
