- Generous sliced batang fish — at least 4-5 thick slices, the dark-skinned grey-fleshed Spanish mackerel, properly cooked just past raw so it stays moist.
- A bunch of fresh choy sum stems for the green crunch.
- A scatter of crispy fried shallots on top for the aromatic-salty top note.
- A sprinkle of chopped coriander for the herbal pop.
- A small dish of red chilli sauce on the side for the kick.
This is the cleaner, lighter alternative to the milky white “fish bee hoon” — clear broth lets the fish flavour shine without coconut/milk masking. Batang is the best fish for this dish: firm flesh, mild flavour, holds its shape against the heat.
The thick bee hoon is the key noodle pick — thin bee hoon gets lost in the broth, thick bee hoon has the chew to carry the fish flavour through every spoonful.
