What was in the tubs ($12 for two):
- Two takeaway tubs of dry ban mian (板面) — flat hand-pulled wheat noodles in a glossy dark sauce.
- Topped with a generous mound of savoury minced pork — fried with garlic and dark soya, the proper Hokkien-style mince.
- A scatter of crispy fried ikan bilis (anchovies) for the salty crunch top note.
- A handful of sweet potato leaves wilted into the noodles.
- A soft poached onsen egg sitting at the side — the runny yolk waiting to be broken.
- Two small condiment cups of bright red chilli sauce.
The dry ban mian style is the underrated cousin of the soup version — without broth, the noodles soak up all the minced pork umami + dark soya glaze, every strand carries flavour. Add chilli sauce for the kick.
Onsen egg upgrade is non-negotiable — break the yolk, mix into the noodles, watch them turn silken from the egg coating. The combination of crispy ikan bilis + minced pork + yolk-coated noodles is the textural triple-threat.
Sweet potato leaves are the proper hawker ban mian green — different from the standard choy sum, more earthy and slightly bitter, balancing the dark glaze.
