First visit to Sanpoutei Ramen at Holland Village: the rich dried sardine tsukemen ($16++) with thick 1.5x-volume noodles and a niboshi dipping broth. The Niigata ramen specialist.
First visit to Sanpoutei Ramen at Holland Village! 😋 Sanpoutei is a ramen house from Niigata, Japan, known for its Niigata-style shoyu ramen.
It was full house at around 1pm and we waited about 15 minutes to get a table, a good sign for a first visit.

Was browsing the menu and discovered that they do have the current trending mazesoba dish too. Interesting.

But decided to order the rich dried sardine tsukemen ($16++) instead, after reading some reviews and wanting to try something different from the norm for the first visit.

Tsukemen is the “dipping ramen” style: the thick noodles are served separately from a small bowl of intensely concentrated broth, and you dunk the noodles in mouthful by mouthful rather than having them swim in soup. The broth here is built on niboshi (dried sardines), giving it a deep, savoury, almost smoky fish umami that’s far punchier than a regular ramen soup.
The thick noodles came at 1.5 times the normal volume, hearty and chewy, exactly what you want for dunking.

With the sardine dip. Yums! The rich, concentrated broth clings beautifully to the thick noodles.

Will definitely be back for a revisit and to try out the other dishes, including that mazesoba!

Overall: 4.2 / 5. 😋👍🏼 The rich, smoky dried-sardine tsukemen with thick chewy noodles was a satisfying first order. Would re-visit.
