The Boon Tong Kee execution leans the upper-mid tier. The chicken is the standard Hainanese-style poached preparation — the skin is the gelatinous-silky texture that says proper poach-and-shock technique, the meat is the moist-and-tender from the cold-shock that locks in the juices.
