This is the Teochew braised duck I love, served over kway teow rather than rice. The wide, slippery kway teow (flat rice noodles) come glossed in that dark, savoury braising sauce, fragrant with five-spice and soy, so every strand carries the flavour.
The braised duck is the heart of it: slices of duck slow-braised in a master soy stock until the meat is tender and steeped in that deep, slightly sweet, aromatic sauce. Teochew braised duck leans on the long, gentle braise rather than crispy skin, so what you get is soft, flavourful meat that has soaked up hours of the master stock. A scatter of fried shallots adds crunch and fragrance, and the little dish of garlicky chilli on the side gives it a sharp lift.
For three dollars this is a properly satisfying bowl, the kind of honest, soy-savoury comfort food that hits the spot. Finding it at this price these days is a small treat in itself.
