The fried bee hoon + lor mee combination is the proper diverse hawker noodle pairing. Different from ordering two similar dishes (which would be flavour-monotonous), the dry-fried + thick-gravy combination provides the proper textural and flavour contrast.
The fried bee hoon at $5.50 was the dry-fried option. Standard Singapore hawker fried bee hoon (炒米粉):
- Rice vermicelli (bee hoon) as the base
- Wok-fried with the proper wok hei char
- Light soy + dark soy + sesame oil for the seasoning
- Vegetables (cabbage, bean sprouts, sometimes chye sim)
