A Sunday noodle lunch with BB at Kanda Soba, the mazesoba specialist tucked in the Don Don Donki food hall at Clarke Quay Central. We each took the lunch set: Original mazesoba + 2 pcs sushi + soup, $12 each. π
What the set came with:
- Original mazesoba: thick, chewy noodles topped with savoury minced meat sauce, a raw egg yolk, chopped chives, spring onion, shredded nori and a little mound of what tastes like fish floss
- 2 pcs sushi and a bowl of soup on the side
Mazesoba is the βmixedβ dry ramen from Tokyo (this chain came to Singapore by way of Korea), and the fun is in the doing. There is no broth: you get the bowl beautifully arranged, then stir it all together vigorously so the egg yolk and meat sauce coat every strand. The noodles are wonderfully thick and springy, and once mixed it eats rich, savoury and moreish, the nori and chives cutting through with freshness. Halfway through you add a splash of the vinegar provided, which sharpens it up just like extra black vinegar on bak chor mee.
With the sushi and soup rounding it out, $12 was a generous, well-priced set for such a satisfying bowl.
