什锦生面 is the assorted (什锦) crispy fried noodle dish, the loaded version of the Cantonese “wat tan” crispy noodles: thin egg noodles deep-fried into a crunchy birds-nest, then topped with a silky egg gravy and a generous mix of pork, seafood, fishcake and greens. The “什锦” (assorted) designation means everything goes on, more variety than the plain version.
The textural contrast is the whole point: the gravy softens the noodles where it pools while the edges stay crisp, so each bite has both the crunch and the soaked-soft give. Eat it promptly, while that contrast still holds, before the nest fully softens into the sauce.
The egg gravy is the craft: a stock thickened with cornstarch and finished with beaten egg streamed in so it sets into silky ribbons (the “wat tan” finish), glossy and barely-set, draping the noodles and binding the assorted toppings.
