Happy 12.12 everyone! π A throwback post, a revisit (in May 2019) to Shimbashi Soba!
Shimbashi Soba is the handmade-soba specialist, known for milling and making its buckwheat soba in-house daily, the kind of place where the noodle itself is the craft. Soba is served two ways, hot in broth or chilled on a bamboo seiro to dip, and a soba specialist is judged on the texture and the buckwheat aroma of those noodles.

Beef tsukemen seiro ($20.80++), the dipping-style soba: chilled soba on the seiro served with a rich beef dipping broth, you dip the cold noodles into the warm, concentrated tsukejiru. The contrast of cold springy noodle and hot savoury dip is the whole pleasure of tsukemen.

And lastly, ended with a birthday cake for him, a white zebra cake ($4.80) from Chateraise! π The Japanese-style light sponge, an affordable sweet finish.

The handmade soba had the right springy bite and buckwheat character, and the beef tsukemen dip was rich without being heavy. Will still revisit to try out other soba varieties. ππΌ
