We ordered:

White bee hoon (白米粉) is the underdog version of the more famous fried bee hoon. Instead of the dark-soy stir-fried sin chow style, the white bee hoon is braised in a clear seafood-and-pork stock until the noodles drink it up. The result is a slippery, light-coloured bee hoon that’s heavy on broth flavour and light on visual presentation.

The “signature” (招牌 / zhaopai) framing puts this in the premium-tier category. Most stalls have a standard white bee hoon at $4-5; the signature variant runs $6-8 with the upgraded toppings and the proper broth concentration.

The broth was the headline. Deep amber colour from the hours of pork-bone-and-seafood simmering, with the proper umami depth from the long cook. The shell-stock reduction gives the broth the slightly viscous mouthfeel that distinguishes proper white bee hoon stock from quick-cooked broth.

The bee hoon noodles were the substrate. Thin rice vermicelli, slippery, with the proper texture that holds up against the broth without going gummy. The proper technique braises the noodles in the broth at the end of cooking, letting them absorb the seafood-and-pork flavour while staying slightly al dente.

The seafood components were the upgrade. Prawns and squid in particular add the proper shellfish flavour to the broth as you eat, with each bite of prawn releasing more of the umami into the surrounding noodles.

A small dish of cut chillies in light soy on the side for the optional spice and acid lift.

At $6 a plate for the signature variant, this is fair premium hawker pricing. The standard white bee hoon at $4-5 is the entry tier; the $6-8 signature variants justify the premium with upgraded toppings.
