Omote Singapore — tamago mentai chirashi and salmon booster chirashi don bowls plus ikura chawanmushi side. $67 total.
Dinner at Omote with BB: a chirashi twin plus ikura chawanmushi. $67. 😋
What was on the table ($67):
- Tamago mentai chirashi (front): sushi rice with torched mentaiko tamago strips, salmon cubes, ikura, scallions and wasabi.
- Salmon booster chirashi (back): extra salmon over rice with ikura, maguro, wakame and nori.
- Ikura chawanmushi: savoury steamed egg topped with bursting salmon roe.
- A soya saucer and the Omote ceramic mascot.
Chirashi (“scattered sushi”) is a bowl of seasoned sushi rice topped with an assortment of sashimi and garnishes, and Omote has made a name for itself as a chirashi specialist. Their signature is the tamago mentai version: strips of sweet rolled Japanese omelette (tamago) slathered with mentaiko mayo and torched, so the top caramelises into a smoky, savoury, slightly spicy glaze. It was the standout of the meal, that warm torched topping against the cool rice and fish.
The salmon booster chirashi is for the salmon lovers, piled generously with extra salmon alongside maguro (tuna) and ikura. And the ikura chawanmushi is the bonus textural treat, silky steamed savoury egg custard crowned with salmon roe that bursts with briny pops in the mouth. A generous, indulgent Japanese spread for two.
Overall: 4.3 / 5. The torched tamago mentai was the standout, the salmon ratio was generous, and the ikura chawanmushi added a lovely textural pop. 😋👍🏼
