Sunday lunch — Toa Payoh hawker run for beef noodles at one of the regular weekend stops.

We ordered:

The brisket gave away that this stall takes the slow route. Soft-stewed until the connective tissue dissolves, slices held their shape in the bowl but fell apart on the spoon. Beef tendon slices on top, glossy and a little chewy in a good way.

The dry version came with that signature dark sauce — a sweetish, peppery glaze coating every noodle strand without pooling at the bottom. Pickled green chillies on the side gave the lift it needed. The small bowl of clear soup that came alongside had unmistakable bone-stock depth, just lightly seasoned with white pepper and chopped spring onion.

Four dollars for a bowl of this quality is the reason hawker culture in Singapore is worth defending. Toa Payoh’s old-school stalls keep delivering at prices that haven’t moved much in years, while the dishes only get harder to find elsewhere.

Overall: 4.3 / 5. 😋👍🏼 Quiet, consistent stall — exactly what a weekend lunch should be.
