Bangkok holiday afternoon — pulled into our favourite honey toast spot for the dessert that basically defines Thai-Japanese cafe culture in the city.

We ordered:

Honey toast is the deceptively simple-but-perfect dessert: a thick brick of brioche (or shokupan), cubed on top but kept connected at the base, brushed with butter, toasted golden in the oven until the outside is crisp and the inside is still pillowy soft. Topped with vanilla ice cream, whipped cream, fresh fruit (strawberries, blueberries, banana slices), a generous drizzle of honey, and sometimes a dust of icing sugar.

The construction is the whole point. You attack from the top down — break off a cube of toast, scoop ice cream and cream, capture a piece of fruit, drag through honey, and bite. Each spoonful combines warm bread, cold ice cream, fresh fruit acid, and floral honey sweetness in a single mouthful.

This particular cafe does it well — the brioche is properly buttered (not just lightly brushed), the toast goes deep golden brown rather than pale beige, the ice cream is a generous scoop instead of a sad puck, and the honey is the real floral kind. Each bite delivers warm-cold-sweet-fresh in perfect ratios.
