What was in the red bowl (kolo mee $4.80):
- A coil of springy yellow ramen-style noodles tossed in a clear light sauce.
- A small mound of soft-stewed mushrooms (shiitake) โ savoury and umami, the headline of the bowl.
- Minced chicken stir-fried with garlic and herbs at one side.
- A pile of mei cai (preserved mustard greens) โ salty-sour, the signature Hakka touch.
- Crunchy peanuts scattered on top with a few carrot strips for the colour pop.
- A side bowl of clear soup to wash everything down.
Side dish ($1.50): stuffed yong tau foo โ a piece of beancurd with minced fish paste, topped with chopped scallions, coriander and goji berries in a savoury dark soya sauce. Restaurant-quality plating.
Mixed everything together โ the mei cai + mushrooms + chicken combo over the noodles was that classic Hakka taste-of-home flavour.
