Saturday lunch with BB at a Japanese tonkatsu chain — they were running a 1-for-1 promo on the top-grade BP (black pig) tonkatsu set. Premium pork at half the cost is exactly the kind of math we always chase.

We ordered:

The black pig tonkatsu is the upgrade from the standard pork loin. Kurobuta-style heritage pork has more marbling, sweeter fat, and a denser texture — when cut into a thick-cut loin and breaded with panko, it produces that distinctive shatter-crust outside and tender pink-tinged inside.

Each set came with the tonkatsu sliced into bite-sized strips, plated on a wire rack so the bottom of the crust stayed crisp instead of going soggy. Beside it: a small mound of finely-shredded raw cabbage, a slice of pickled daikon, miso soup, fluffy short-grain rice, and a small ramekin of tonkatsu sauce.

The cabbage shred is part of the experience — you dress it with the included sesame dressing, eat a few mouthfuls between pieces of pork to cut through the fried-fat richness.

Sesame seeds get pestle-and-mortared at the table before you mix in the tonkatsu sauce. The grinding releases the oils and aroma — this is the ritual that turns sauce into actual sauce.

At $31.80++ for two via 1-for-1, this is fair top-tier tonkatsu pricing — full price each set runs closer to $30++ alone.
