Kajiken specialises in mazesoba (まぜそば), the brothless β€œmixed noodle” style of ramen: instead of swimming in soup, thick noodles come topped with a concentrated tare sauce, minced meat, egg yolk and aromatics that you toss together yourself before eating. The menu had more varieties and options compared to Menya Kokoro at Suntec City.

Taiwan mazesoba with karaage ($15.80++), so yums! Any fan of spring onions would love this one, it comes heaped with them. The Taiwan mazesoba leans on minced pork, a runny egg yolk, garlic and chilli, and the bonus here is the karaage (Japanese fried chicken) on the side, juicy and crisp. Toss everything together so the yolk and tare coat every strand, then dig in.

Ordered the seasonal dish too, the Spicy garlic pork mazesoba ($16.80++). A tad bit spicy, but the garlic pork blends in nicely. The beauty of mazesoba is in the mixing: once it’s all combined, the thick chewy noodles carry the savoury, garlicky, slightly spicy sauce in every bite, no broth needed.

A good spot for something different from the usual soupy ramen, the brothless mazesoba is rich, punchy and surprisingly filling. Will revisit.
