Most people know bak chor mee as the dry, tangy version tossed in vinegar, chilli and lard, but I have a soft spot for the soup one, and these bowls were exactly why. You get the same springy egg noodles (a mix of flat mee pok and thin mee kia here) and the same toppings, but sitting in a clean, savoury pork broth instead of a dry sauce.
The broth was the comfort: light and clear, just porky enough, with a little fried-shallot fragrance floating on top. Through it ran loose minced pork, plus bouncy pork balls and a scatter of spring onion. It eats gentler and more soothing than the dry version, the kind of bowl you want on a quiet morning rather than a flavour-bomb.
A dash of chilli or a splash of the vinegar on the side perks it up if you miss the tang. Simple, homely and satisfying, and at $4 a bowl it is honest hawker value.
