This is the thick, NYC-style stuffed cookie rather than a thin, crisp one, and it is gloriously indulgent. The cookie itself is big and soft, the kind with a slightly underbaked, doughy middle studded with pools of melting chocolate that stretch when you pull it apart. Eaten warm, it is all gooey centre and chewy edges.
The Biscoff is what makes it special. A whole Lotus biscuit sits crowning the top, with that caramelised, cinnamon-spiced flavour, and there is Biscoff worked through the cookie too, so you get bits of crunchy spiced biscuit against the soft, chocolatey dough. The sweet-spiced caramel of the Biscoff plays beautifully against the rich chocolate.
It is a lot of cookie, and very rich, definitely one to share or to pair with a black coffee to cut the sweetness. But as an occasional treat, it absolutely hits the indulgent, gooey-cookie craving. At $4.90 it is a hefty, satisfying one.
