What we had:

This came pale and glistening rather than dark, the mix of yellow noodles and bee hoon wok-fried and braised in a prawn stock so the strands drink up that shellfish savouriness. Tumbled through were sweet prawns, ribbons of egg, and a scatter of crispy pork lard on top, those little golden cubes that give Hokkien mee its fragrance and crunch.
A good plate has that faint smoky wok hei and just enough moisture to keep the noodles slippery, and this had both. The sambal on the side does the heavy lifting: a spoonful stirred in plus a squeeze of the calamansi lifts everything with chilli heat and a bright hit of citrus.
Squeeze, stir, mix it all together, and every forkful turns savoury, smoky and tangy. Honest, comforting and a steal at four dollars.
