Happy mid week dinner: steamboat!
A mid-week steamboat dinner: a divided pot of tom yum, herbal and collagen broths, with handmade meatballs, mushrooms, quail eggs and vegetables to cook.
Happy mid-week! π We broke up the work week with BB over a cosy steamboat dinner, gathered around a bubbling divided pot.
What we had:
- A multi-broth steamboat: a spicy tom yum, a darker herbal broth and a milky collagen broth
- Trays of handmade minced meatballs, plus mushrooms, quail eggs, cabbage, beancurd and other bits to cook
Going for the divided pot is the smart move because you can chase different moods in one meal. The tom yum side was the exciting one, hot, sour and fragrant with chilli and lime, building a real kick. The herbal broth was the comforting, gently medicinal-sweet one that deepens as more ingredients cook through it. And the collagen broth was the soothing, savoury side to balance the heat.
The fun is in the rhythm: drop the meatballs and vegetables in, swish them through the broth until just cooked, fish them out, dip and eat while piping hot, then go again. The handmade meatballs were the highlight, springy and savoury, and the quail eggs and mushrooms soaked up whichever broth you cooked them in.
It is interactive, warming and endlessly customisable, the kind of unhurried dinner that turns an ordinary Wednesday into something a bit special.
