This is the Cantonese style of congee, simmered until the rice grains break down completely into a smooth, almost silky porridge, rather than the looser Teochew version with whole grains. That velvety, soothing texture is the whole appeal, the kind of bowl you want when you need something gentle and comforting.
The toppings keep it interesting: tender shreds of poached chicken stirred through, a scatter of fresh spring onion for a little bite, and crispy fried shallots that add fragrance and crunch. A dash of white pepper and a swirl of soy sauce season it nicely.
The best part is the you tiao on the side, that golden, airy dough fritter you tear up and dunk into the porridge so it soaks up the congee and goes soft in the middle while staying crisp at the edges. Congee and you tiao is a classic pairing for a reason.
Simple, light and warming, it is the sort of unpretentious bowl that just hits the spot, and at $3 it is brilliant value.
