What was in the bowl ($3):

The Cantonese style of congee is the smooth kind: the rice is simmered low and slow until the grains break down completely into a silky, almost creamy porridge, very different from the Teochew style where the grains stay whole in a watery broth. It’s the ultimate comfort food, gentle, warming and easy to eat.
The shredded chicken keeps it light and protein-y, while the toppings do the heavy lifting on texture and aroma: crunchy fried youtiao that you let soak just slightly into the porridge, fragrant fried shallots, fresh coriander, and a good shake of white pepper to give it that warming kick.
