What we had:

Chicken porridge looks humble but takes real skill to do well, and this bowl had it right. The congee was velvety and smooth, simmered until the rice grains had all but dissolved into the broth, thick enough to hold the spoon but not gluey. Soothing, easy on the stomach, exactly what you want from a porridge.
Stirred through was plenty of hand-shredded chicken, soft fibres rather than dry cubes, with a topping of crunchy slices of you tiao (fried dough fritter) that you push under to soak up the broth, going from crisp to plush. A scatter of fried shallots, fresh coriander and a generous dash of white pepper finished it, the pepper adding a gentle warmth that lifts the whole bowl.
A spoon of light soy if you want more savouriness, and that is it. Honest, gentle, comforting food for $3, the kind of bowl you crave when you want something warm and easy.
