We ordered:

Chicken porridge is one of the lowest-effort hawker meals that still requires real skill. The rice has to be properly broken down through hours of slow simmering, the chicken stock has to be deep without being heavy, and the shredded chicken has to come from a properly poached bird rather than recycled scraps.

This bowl was the proper version. The porridge had the right consistency — thick enough to hold the spoon upright but not gluey, with the rice grains nearly invisible because they’d dissolved into the broth during the cook. The texture was velvety rather than chunky.

Chicken came shredded by hand — visible fibres rather than diced cubes, the proper sign of fresh-shredded poached chicken. White meat from the breast plus some darker thigh meat for the flavour balance.

Toppings included chopped scallion, slivered ginger, fried shallots, and a small drizzle of sesame oil on top. A few you tiao (fried dough fritter) pieces on the side — break them into the porridge, eat as the texture contrast goes from crispy to plush.

Light soy sauce and white pepper on the side. A spoonful of white pepper into the porridge is the proper finishing seasoning that adds warmth and aromatic spice.

At $3 a bowl this is honest hawker pricing. The labour is in the slow porridge simmer; the ingredient cost is minimal once you have the rice and chicken.

Porridge is the kind of dish you order when you want comfort food without the heaviness. Easy to digest, properly satisfying, the right temperature to warm you from the inside.
