The “signature” bowl earns its name with the beef. You get a mix of cuts: thin, just-cooked beef slices that stay pink and tender, plus chunkier pieces of shank braised soft so they pull apart easily. There is a generous heap of it, which is exactly what you want from a premium beef noodle bowl.
The broth was the clear, deeply savoury style rather than a heavy braise, simmered down with beef bones and aromatics until it tastes rich and clean at once, with the sliced onion lending sweetness and the pickled greens cutting through with a welcome tang. The flat noodles soaked it all up nicely and had a good slippery bite.
A scatter of spring onion on top freshens it, and a dab of chilli on the side adds heat if you want it. It is the comforting, restorative kind of noodle bowl, light enough to finish but full of beefy flavour. At $10.90 it sits a touch above hawker prices, but the quantity and quality of beef made it feel fair.
