This is the vegetarian take on Hokkien mee, and it holds up surprisingly well without the prawns and lard. The mix of yellow noodles and bee hoon came glistening in a light, savoury gravy, soft and slippery with that braised-noodle texture.
Through it were plenty of vegetables, bean sprouts for crunch, shredded carrot, soft mushroom and leafy greens, plus ribbons of egg folded in to add body and richness. The gravy carried a good wok-fried savouriness, leaning on mushroom and vegetable stock for depth instead of the usual seafood base, and it had soaked nicely into the noodles.
It is lighter than the prawn version, of course, but tasty in its own right, and a satisfying way to keep things vegetarian. A squeeze of the chilli on the side adds a welcome bit of heat.
Overall: 4.5 / 5. πππΌ Soft, savoury vegetarian Hokkien noodles with egg and plenty of veg. Would re-order.
