The trio shrimp ramen is the premium-tier bowl. The “trio” refers to the three different shrimp components in the bowl — usually a combination of grilled tiger prawns, shrimp dumplings, and shrimp paste in the broth base. Plus the standard ramen architecture of noodles, broth, chashu pork, soft egg, scallion and seaweed.
The broth was the most interesting component. Tonkotsu-style pork bone base combined with shrimp shells and heads reduced down together, creating a layered umami profile that’s both pork and seafood at once. Opaque-cream colour from the tonkotsu, with the shrimp adding a slight orange tint and that distinct deep-sea sweetness on the back end.
The trio shrimp components were the headline. Two grilled tiger prawns sat on top with their tails on, properly cooked with a slight char from the broiler. A pair of shrimp dumplings (similar to har gow but ramen-shaped) bobbed in the broth. Shrimp paste was either incorporated into the broth base or as a small dollop on the noodle pile.
Standard ramen architecture filled in the rest. Slightly wavy alkaline noodles cooked to firmness, a couple of chashu slices, a soft-boiled marinated egg (ajitsuke tamago) halved with the runny yolk visible, scallion shreds, a sheet of nori.
$37.47 after the 20% Citibank discount is the premium ramen pricing. Full price would have been around $47. The card-promo discount turned an otherwise-out-of-reach bowl into something more reasonable.
Phase 2 reopening had restored access to the premium ramen scene, and card promos made it occasionally affordable.
